Pomegranate + Lemon Vinaigrette (whole30, paleo, low-FODMAP, vegan, vegetarian, keto)

This simple vinaigrette dressing takes virtually no time to make and is full of vitamins and fiber! Many store bought dressings come with extra sugar, hydrogenated fats (not so heart healthy!), and additives, but homemade dressings are quite simple, delicious and so much better for you.

I use pomegranate seeds which are loaded with fiber and antioxidants, blend them smooth with lemon juice, avocado oil, seasoning and DONE! A gorgeous pink dressing that is great for girls nights, brunch, or just because. My two year old loves the pink color which is always a plus when getting the kiddos to eat healthy foods. So put down that bottle of old ranch and try something fresh!



¼ cup pomegranate seeds (not juice!)

¼ cup lemon juice

Zest of one lemon

½ cup avocado oil

⅛ teaspoon salt

Pinch of black pepper




Blend the pomegranate seeds and lemon juice with an immersion blender until the seeds become smooth. Slowly add in the oil, blending at the same time. Stir in the lemon zest, salt and pepper. Keep in the refrigerator for up to a week. Enjoy!
