Dairy-Free Cheesy Potatoes(Low-FODMAP, Gluten-Free, Diary-Free, Paleo)

Lately I have been focusing on quick and simple recipes for my family as well as some of my busy readers. This is one of my favorite recipes and it uses one of my favorite ingredients, nutritional yeast. Nutritional yeast gives a dish a cheesy flavor without any dairy. and this is great news for those who suffer from dairy intolerance!

Paleo, or not Paleo? That is the question when it comes to potatoes. Potatoes are making their way into the Paleo circle as an approved food, but some "Paleoers" still say no. Potatoes are a resistant starch which means the starch is resistant to digestion in the small intestine. This sounds like a bad thing, but it actually works in our favor because the starch is broken down in the large intestine by the gut bacteria. This feeds our gut bugs and promotes healthy bacteria in the large intestine.

HOWEVER! Individuals who suffer from nightshade intolerance or an autoimmune disease should avoid potatoes because they can trigger unwanted symptoms. Also, nutritional yeast is high in fiber and can cause upset in the digestive tract in certain individuals; though it is low-FODMAP.


Process

Peel and boil potatoes until easily pierced with a fork, about 10 minutes. The smaller you chop your potatoes the fast they will cook; I cut mine into 1/2 inch chunks.

Once the potatoes are cooked, drain the water and add the rest of the ingredients in to the pot. Use an stick blender to blend until they are smooth. Enjoy!

 

Pantry

6 Yukon potatoes, medium

1/4 cup coconut milk

1/4 cup water

1/4 cup nutritional yeast

2 tablespoons butter

1 teaspoon salt

1 teaspoon pepper
